Characteristics: the Borlotto bean has always been of considerable gastronomic and economic importance in some vast areas of Piedmont. It is a highly prized bean and appreciated for its "organoleptic" characteristics which are influenced by the climate and the particular nature of the soil: with good drainage, soft and fertile which allows less use of fertilizers.

In the kitchen: borlotti beans are the traditional ingredient for soups, minestrone with vegetables and cereals (excellent with spelled) and pasta and beans. They are also suitable for salads, as a side dish to tasty meat dishes such as game and for beans alla cacciatora. Excellent pastes or creams.
