For our "intact polenta as it once was" we only use maize grown in the Bergamo valleys and plains, from a controlled supply chain of Italian origin. We dry it at low temperatures to preserve its natural characteristics and nutritional values. The subsequent milling also leaves the food properties of the germ unaltered.
The raw materials, guaranteed "gluten-free", are used in a dedicated facility, thus avoiding any possible contamination, harmful to the health of people with particular allergies or gluten intolerances. Enjoy our polenta as it once was, on a very hot wooden cutting board or accompanying it with seasonal mushrooms, cheeses and cured meats.
